Coming Out of My Ears

I just got done baking 10 dozen peanut butter cookies for my son's graduation party. I like them crispy and crunchy and found the perfect recipe:

Peanut Butter Crunch Cookies

1/2 cup unsalted butter
1/4 cup granulated sugar
1/2 cup light brown sugar, firmly packed
1 large egg
3/4 cup smooth peanut butter
1 teaspoon pure vanilla butter
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups crispy rice cereal
1/2 cup chopped peanuts

Heat oven to 375 degrees F.
Cream butter and sugars in a large bowl.
Add egg, peanut butter and vanilla. Mix well.
Sift together flour, baking soda, and salt.
Add to butter mixture. Fold in rice cereal and peanuts.
Form the dough into 1 1/2 in. balls.
Place on foil lined baking sheets 2 inches apart.
Press cookies with fork to create hatch marks.
Bake until golden about 9 minutes.
Makes about 2.5 dozen cookies.
