Coming Out of My Ears

I just got done baking 10 dozen peanut butter cookies for my son's graduation party. I like them crispy and crunchy and found the perfect recipe:

Peanut Butter Crunch Cookies

1/2 cup unsalted butter
1/4 cup granulated sugar
1/2 cup light brown sugar, firmly packed
1 large egg
3/4 cup smooth peanut butter
1 teaspoon pure vanilla butter
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups crispy rice cereal
1/2 cup chopped peanuts

Heat oven to 375 degrees F.
Cream butter and sugars in a large bowl.
Add egg, peanut butter and vanilla. Mix well.
Sift together flour, baking soda, and salt.
Add to butter mixture. Fold in rice cereal and peanuts.
Form the dough into 1 1/2 in. balls.
Place on foil lined baking sheets 2 inches apart.
Press cookies with fork to create hatch marks.
Bake until golden about 9 minutes.
Makes about 2.5 dozen cookies.

Getting down to the wire

I am putting final touches and getting ready for my son's graduation party this Friday. Could possibly have up to two hundred people come although I doubt everyone will show. I have put on parties for about 60 people but this is definitely the biggest. Hope I won't run out of food. I don't have enough refrigerator space and that is my biggest nightmare so far.
It's going to be a crazy week so I won't be able to do much etsy stuff, unfortunately.

My dog needs a haircut

Well, this is my first entry on my new blog. I adopted my dog about a year ago from the Humane Society. My boys wanted to adopt her right away but I was a little hesitant as I wanted to get a feel for the dog and not just choose her because she was cute. She was cute and sweet but she was in a strange environment at the Humane Society and so that may not have been her true nature. Anyway, my boys pleaded to get her and so I relented. I am glad they talked me into it because she is so good natured and a little dynamo. She wants to play all the time . She is getting very shaggy and I am looking for a groomer as we speak. People say Belle looks like the dog from the Wynn Dixie movie. She does a little bit I guess.
